I have been baking like crazy lately. I think the fall has the perfect conditions for baking - the cool weather, an abundance of apples and pumpkins and football on TV all weekend. My perfect day is spent in the kitchen with my boys "helping" as a taste tester and the hubby doing stuff around the house with football on TV. I am always looking for new recipes to try out and have decided to share with everyone the best of the weekend baking. </div>

My family joined a local Farm CSA this summer and we have gotten A LOT of acorn squash the last few weeks. Acorn squash is not something I have ever cooked with before and I didn't think my husband or kids would go for any of the roasted acorn squash recipes I was seeing online. When I came across <a href="http://evabakes.blogspot.com/2012/11/acorn-squash-bread.html" target="_blank">this recipe</a> last week for Acorn Squash bread on the blog Eva Bakes, I decided to give it a try. It was a success and another way to sneak some veggies! I decided to make it again this past weekend but played around with the recipe slightly. I doubled the recipe, lessoned the oil by a 1/4 cup and used applesauce for 1 cup of the sugar. I also made them in little pumpkin cupcake molds for the boys and mini bread loaf pans. I cooked them at 350 for 25 min and they came out great!

I also came across this <a href="http://projectputthatcookiedownnow.com/2011/acorn-squash-quick-bread-with-cranberries-and-walnuts/" target="_blank">slightly healthier version</a> of a acorn squash bread on the blog, Project Put that Cookie Down Now. I couldn't decide which to make so I had to just make both. Once again, I changed up the recipe slightly. I used applesauce again in this recipe but used it to replace the oil. I also did not have any walnuts around so instead I used half pumpkin seeds and half sunflower seeds. I love this bread and will make this part of my rotation!</div>

I was in charge of dessert for my niece's christening this past weekend as well. I had tried out this <a href="http://www.the-girl-who-ate-everything.com/2011/09/cookies-and-cream-cheesecakes.html" target="_blank">cheesecake recipe</a> from the blog, The Girl Who Ate Everything, a few months ago and it worked out so great, I made it again. In place of sour cream in this recipe I used greek yogurt and it was delicious! I also switched up the bottom and toppings for the cheesecakes. Using the same cheesecake base, I made a traditional graham cracker crust with a raspberry jam and whipped cream topping, a whole Oreo at the bottom with a whipped cream topping and a piece of Oreo accent and lastly I used a whole Reece's Peanut Butter cup at the bottom with a salted caramel and whipped cream topping. By far, everyone LOVES the Reece's Peanut Butter bottom. It's a winner!!</div>

For me, buying a gift for people seems to be getting harder and harder. I always want to get something thoughtful and useful but fun and creative at the same time. Lately, etched glass has been my go to gift. There are so many options depending on what the person may need. For Christmas a few years ago, I personalized beer mugs for all the men in my family. </div>

Since then, I have had a little more practice and now I am making etched glass gifts all the time. It is easier than you think. You can either buy an adhesive stencil or if you have a vinyl cutting machine like the Silhouette you can make any number of designs. I would not recommend using a regular, non-adhesive stencil because you do not want any of the etching paint to get under the stencil. <br />

Recently, it was my husbands grandparent's anniversary so I decided an etched pitcher would make a nice gift for a couple that really doesn't NEED anything. I found a nice straightforward pitcher at Bed, Bath & Beyond and put their Initial on it with a scalloped circle design around it.</div>

While shopping a second pitcher caught my eye because of the shape and because it was on sale. Coincidentally, Silhouette was offering a cute "HOME SWEET HOME" image as their free image of the week so I decided to treat myself to a new pitcher. Instead of using expensive vinyl I found that contact paper from the dollar store worked well for this project. I used it for both the actual stencil and transfer material. Make sure the stencil is on your glass well!! </div>

After removing, I carefully applied a thick layer of the glass etching paint to the glass. This stencil was a little tricky because of the fine lines. After waiting the time suggested on the etching paint bottle, I washed off the paint and my pitcher was complete. </div>

I have a problem when it comes to crafts. I can not stay on any one thing too long. I become completely obsessed with whatever new thing I have started and then quickly move on to something else. Everything seems to be monogramed lately. It is a fun way to turn something ordinary into something that feels fancy. I have a VERY fancy niece. (I might be partially to blame for this. I bought about 20 of them in 2 shades of purple, white and green along with 3 big hydrangea blooms. I also bought a grapevine wreath. The grapevine wreath makes this project a breeze. I simply started to stick the stem of the flower into the grapevine wreath. I kept making my way around arranging the colors how I liked them. Any stems that stick out to much can be cut with wire cutters. Also, if any part of the flowers stick out a little too far, you can tie them to the wreath with flower wire. </div>

I cut the hydrangea stems low and fixed them into the wreath. I also cut the leaves off the stem to add some green to the wreath. I love the way it came out! I saw wreaths that I did not love as much in the store for $50 and this probably cost me $20 total. (Probably would have been cheaper if I waited for the flowers to be on sale but I am impatient when I have a project in mind!)</div>

My husband is always a hard person to buy Christmas gifts for. He is pretty picky about clothes, if he sees something he wants he usually just buys it or the item he wants is out of the price range I want to spend. Over the past year or so, my husband has become a sort of beer snob. He has started brewing his own beer and he loves trying new craft brews. </div>

I had the idea to get him 25 different craft beers so he could have a sort of craft beer advent calendar. Luckily a new beer store opened near us in time for me to pull this off. Since I know nothing about beer I went into the store and asked for help. They were amazing and picked out all 25 bottles for me. I had an idea of what he liked just from what I had seen him drink. I knew I had a good idea when the guy helping me at the store told me what a great idea it was and said he wasn't sure how I could top it next year.</div>

I did not have much time to make any kind of elaborate holder for the 25 bottles since I literally put this all together the morning of December 1st. I wrapped each bottle with Christmas tissue paper and put a label on each one with "Days til Christmas" and the number of days left. </div>

I found a really cute print at JoAnn Fabrics in the clearance section and purchased 3 yards (even though I knew it was too much but wanted extra in case.) Once I got it home, I ironed the fabric and laid the fabric on the board. I went around the perimeter with a butter knife tucking the fabric in between the frame and board.</div>

Some projects come out much better than expected while other projects are nothing like you the picture in your head. The other day I had a great idea (or so I thought.) I wanted to make Halloween wine bottles for decoration. It seemed so promising….did not turn out the way I had hoped.</div>

I first cut the bottoms off the wine glass by scoring the bottom and going back and forth pouring boiling water and ice water on the bottom of the bottle. This took a little time and I will have to practice this a little more in order to make the cut even at the bottom. After the cut was complete I sanded down the bottom to get rid of any jagged edges.</div>

Next, I set up a spray paint station in the garage and got to work. I did at least 7 coats on each bottle. I wanted to make sure there there wouldn't be any light peaking through in any other place than where I wanted.</div>

After giving the bottles ample time to dry I peeled the contact paper off the bottles. I was really excited to see how it came out but I was so disappointed when I put the candles inside and realized the light was not bright enough to show the design. I tried every combination I could think of but unfortunately nothing worked. There was also a problem with the candle not staying light in one of the bottles.</div>

I picked up mini halloween lights at the dollar store and they work better than the candles but it is still not the look I was hoping for. It is a cute decoration and the boys seem to think its neat and they are really the only critics I care about.</div>

I love these Pumpkin cookies. They are on the healthy side, very little sugar, whole wheat flour and no butter. There are some chocolate chips so this really satisfies the sweet tooth but I do not have to feel guilty eating it or packing it as a snack for my little guy. <br />

I was really excited to try out this spider chocolate chip cookies idea. I decided to stay with the recipe provided because I wanted to make sure it was a flatter cookie that would be easy to put the spider on. My husband LOVED these cookies and I think they are a really cute festive idea for this time of year. I am going to make them for a fall festival bake sale at my sons school.<br />

I also made these <a href="http://recipes.sparkpeople.com/recipe-detail.asp?recipe=2400533" target="_blank">Healthy Carrot muffins</a> from Martha Stewart. This is actually the second time I have made them. They satisfied everyone in my house which is amazing. My kids loved them for breakfast, I love them and my husband (who is not always the easiest to please especially when something is healthy) enjoys them. I found a Jack-O-Lantern cupcake mold I forgot I had and made half the muffins using it. The boys loved it and probably half the reason they eat them!<br />

All in all the weekends baking was a success. I would 100% recommend trying out any of these recipes.</div>

Recently my husband painted our basement and we have been trying to be creative and repurpose stuff we already have for wall decor. We came across a few canvases that were a DIY project gone wrong from a few years back. We spray painted them white and I decided it would be the perfect project for my little guys. </div>

I first used my Silhouette Cameo to cut out their initials with contact paper. I put their initials in the middle of the canvas and set them up to start painting. <br />

They came out delicious. They do have a mild coconut flavor from the coconut flour and oil. For not having any of your "typical" cookie ingredients like butter, white flour or sugar, these cookies were amazing and I can not wait to make them again. I feel a little less guilty eating 1 or 2...</div>

I can't believe another season has come and gone. Even though my posts have been seriously lacking, it does not mean I have not been busy with various projects around the house. At the beginning of spring my mom picked up a great wood table and chair set for my little niece at a second time around sale but the table was painted blue and yellow.</div>

I volunteered to repaint the table to match my niece's room better. It came out adorable if I do say so myself! My sister loves all Lily Pulitzer so I decided I was going to paint the table in that theme. My husband spray painted the table and chairs a light pink color. I found a paisley pattern Martha Stewart silk screen and used that to paint the table. I chose to do it in a more random design instead of a thought out pattern. I think it came out pretty nice. </div>

Who doesn't love the summer time and all the delicious food that goes along with it. One of my favorite summer foods is seafood. I love almost all seafood but clams are a particular favorite of mine. I think the most delicious thing to eat on a warm summer day near the pool is a grilled clam and sausage dish I first had at my friends house. It is really easy to make and adapt to your taste and can be an appetizer or an entree. </div>

First take about 3 or 4 hot sausage links and cut them out of their casing. I usually break them up and sauté them in a minimal amount of olive oil and wait for them to get all brown and delicious. When done I throw them into a foil pan. Then I zest 2 lemons and use the juice from both. Clean, add the bag of 50 clams to the foil pan and drizzle about a quarter cup of olive oil on top. Lastly, pour about three quarters of a bottle of white wine into the pan. The liquid should come up halfway in the pan. The clams should not be submerged in the liquid. Cover with aluminum foil and set on the grill on high until all the clams open. About 10 minutes. Serve with your favorite bread (Rosemary Sea Salt from Wegmans if it is up to me) and dig in.</div>

I will get to a healthy alternative in a minute, but a few weeks ago I was making chocolate treats for my MIL's birthday party. I had some leftover chocolate and popcorn laying around so I decided to combine the two. This was also a great activity for my little guy to get involved in. I just spread the popcorn out on a cookie sheet covered with parchment paper and drizzled the chocolate on top. Before the chocolate had a chance to harden, I threw some sprinkles on. Such a delicious treat and so addictive!!!</div>

While this is amazing and a great treat alternative it is not an everyday item. There are so many delicious ways to make popcorn a little more exciting that just plain air popped! My latest obsession is having the popcorn with a little spray of coconut oil, a sprinkle of Himalayan Pink Sea Salt and a dash of cayenne. Might sound weird but it has everything, crunch, sweet, salty and spicy. Its a great snack and you can eat 3 cups for only 100 calories! Try it..you might get hooked!</div>

Over the weekend I had a great time at one of my best and oldest friend's bachelorette party. The bachelorette party was an all day wine tour out on the east end of Long Island. I was so excited to go because it had been a long time since I had been able to go to a winery carefree (not pregnant or nursing!) There were about 20 ladies that were a part of the festivities and we had a party bus for our transportation. The mother of the bride had the cute idea to have mini champagne bottles and individual orange juice bottles for the girls so we could enjoy mimosas on the drive out to the wineries. I volunteered to make the glasses that everyone could use for their beverages of choice. </div>

After going over a few options, I decided to etch "MB's Bachelorette Wine Tour" on each glass. After playing around with my Silhouette I was able to get the sizing just right to fit on the wine glasses. I used contact paper from the dollar store and cut 20 of the stencils out. </div>

Once all the stencils were cut I started the assembly line. I applied all the stencils to the glasses and starting etching. (I apologize I was so wrapped up in making the glasses I forgot to take pics along the way.) In batches of 3 or 4 I painted on the etching paint and left it on about 1 or 2 min a piece and washed all the etching paint off. After all the glasses were complete I applied some self adhesive rhinestones just to bling them out. Here was the brides finished product.</div>

I did not go as rhinestone crazy with the rest of the girls. I just applied a few rhinestones to the glass not the stem. One thing I did not think of was condensation from the glass. The rhinestones slid around and some came off completely. Oh well.....They were a cute idea!</div>

A few months ago I wrote a post about my experience with Jamberry Nails. At the time I was intrigued with the product and eager to try it out. Painting my nails is not something I have the luxury of doing on a regular basis and finding the time to actually get a manicure is out of the question. </div>

I did not have a great experience when I first tried the Jamberry Nail Wraps but as I said in my original post I felt like it was my fault. Even the consultant that gave the party admitted she did not do a good job demonstrating how to apply. I decided to try it out again because I really did love the idea of them and the designs are amazing. Lets be honest, how many people actually have the time to do any of the crazy nail art we see in the magazines or on Pinterest. </div>

After trying again I had success! I was so excited! Now I am a little addicted. If applied correctly, they last a week on me. Other people say you can get 2 weeks out of them but to be honest, after a week I am ready to switch them out anyway!</div>

Mix together the milk and vinegar/lemon juice and set aside while you combine all the dry ingredients. I usually add the vanilla extract directly to the milk and beat the egg with it all. (Saves time and dishes!) Melt the butter and combine all wet ingrediants to the dry. Mix together and start cooking up some pancakes! Sometimes I will add diced apples or even mashed sweet potato to get some extra nutrients into the boys. </div>

About a year ago my brother-in-law turned to the Paleo diet. At his son's 1'st birthday party he made the traditional Italian food but also made a delicious Butternut Squash Lasagna. After trying it I fell in love and it quickly became a go to meal when butternut squash is in season. You can make it in many different varieties and I would encourage taking my recipe below and making it your own. </div>

1 Butternut Squash (Peeled and sliced)</div>

2 handfuls Baby Spinach </div>

6-8 Button mushrooms</div>

1 cup Ricotta Cheese</div>

1 cup shredded Mozzarella Cheese </div>

Salt & Pepper</div>

1. Heat the oven to 350 degrees</div>

2. Slice the butternut squash (sprinkle the slices with a little salt) and mushrooms</div>

3. Spread a layer of tomato sauce on the bottom of a 9x13 pan</div>

4. Evenly spread the butternut squash, followed by a layer of spinach and mushrooms</div>

5. Next I dropped some spoonfuls of ricotta cheese</div>

6. Repeat steps 3, 4 & 5 until you reach the top of the dish. (Usually 2 or 3 layers)</div>

Tent the lasagna with aluminum foil and put it in the oven for 45 - 55 min. I would recommend sticking a fork in through the center. If it slides through easily it is ready. Remove the foil and put back in the oven for another 5 - 10 min to make sure all the mozzarella is melted.</div>

Depending on the amount of veggies you use there can be a lot of excess liquid at the bottom of the pan. I usually remove a portion of the liquid.</div>

I have a love/hate relationship with all things to do with
my nails. I absolutely love when I have
a fresh coat of nail polish on my nails.
I feel more put together but I absolutely hate everything that gets me
to that point. Painting my own nails,
waiting for them to dry or even going to a salon..its all a nightmare. When
a friend of mine let me know she was going to host a Jamberry party I was very interested in trying

Jamberry’s are very similar to the Sally Hanson nail
strips. They always looked interesting
to me in the store but couldn’t bring myself to spend $10-$14 on the
package. The Jamberry’s come in
different size strips that you have to cut down to fit your nail. They are adhesive but before you apply them
to your nail you have to heat them with a hair dryer. After you apply them to your nail, smooth
them out and file them you have to hold your finger under a blast of hot air
again to set them.<o:p></o:p></div>

The Jamberrys come in a ton of colors and designs that are
super fun. I loved the idea and the way
they looked (without the ripples). The claim is they will stay
on for a week or 2. Mine didn’t make it
2 days. I will say that I think it was
user error. I don’t think I let them
heat up enough and it is one of those things where the more you do it the
easier it will get. I am looking forward
to trying them out again. If I can
figure out how to apply them correctly I will be a customer for life!<o:p></o:p></div>

I completed the Clean Eating Challenge! I know I have been a little MIA and in the
next few weeks I plan on correcting that but I wanted to give a little update
regarding my health and wellness journey. </div>

The Clean Eating Challenge was a success in my eyes. I only did it for 30 days and eating right
and working out I dropped a size. This
is huge for me. While working out isn’t
something new for me actually seeing results is. I now realize a lot of what I was doing
wrong. Results happen in the kitchen!!!
I now know my protein intake needs to be a lot higher then I ever thought, a
banana should no longer be my go to food, and I need to log every calorie into
My Fitness Pal! If I don’t make myself
accountable for what I am eating I will fall back into my old ways. In this challenge I did have Beachbody’s
Shakeology for one meal a day. While
this is something I never thought I would enjoy I found myself looking forward
to it. I liked the fact that
it was a mindless meal. I made the same
shake every day, knew exactly what to log and that it would be a super
nutritious meal. I plan on continuing to
eat the way I have been but not hard on myself if I have a cheat
item. Just not a cheat item every
day! <o:p></o:p></div>

As for P90X3, week 4 was what they call a transitional
week. I got to do Yoga, pilates and
Isometrix all in one week which made for a very pleasant week in order to get
your body ready for the beginning of Phase 2.
I just finished the first week of Phase 2 today and there were
definitely some difficult workouts. I
was introduced to Extreme Upper and Lower which are exactly what they sound
like. 30 minutes of hammering those
muscle groups. This phase also
introduces you to MMX. I had been
looking forward to this workout since I first started the program. I have always loved kickboxing classes and
thought this would be perfect for me.
While I did enjoy it, about halfway through I got awful cramps in the
back of both of my legs. I have never
experienced this before and it taught me a valuable lesson. ALWAYS do your stretches and make sure you
are hydrated. I look forward to trying
it out again next week and making it through the whole hour. <o:p></o:p></div>

I will say that I am pretty proud of myself. I have not veered too far off the healthy lifestyle. Of course I have had a cheat meal here and there but when you are eating healthy and working out 80 - 90% of the time you don't feel as guilty when you let yourself indulge.<br />

A couple things about the clean eating challenge. While I have not gone to the extent I probably should with the clean eating, I have cut out almost all processed food and most sugar out of my diet. One of the hardest things for me to cut out was my coffee creamer. I loved to have flavored creamer in my coffee in the morning but I bought a higher quality flavored coffee and I have started to not crave the creamer anymore. Another thing I have stopped doing is eating off my kids plates! I would make a PB&J and cut off the crust to snack on or take a few spoonfuls of mac & cheese...ya know..just to test it out. Once you start recording what you put in your mouth and make yourself accountable it really does change the way you snack! The hardest part of this challenge is hitting the percentage of daily protein I am supposed to eat. It really is a daily struggle and most days I don't hit it but if I come close I am happy.<br />

P90X3 has been great so far. Yes the workouts are tough and of course there are days I do not want to do it but it is 30 minutes and I just have to walk to the basement to do it. I can't use the excuse of it being too cold out or I don't have time because no matter what I have 30 minutes. I also like the fact that I do not have to think. I look at the calendar and it tells me what disc to do. No debating which machines to use or guessing how many reps I should do. I try my best, follow along and before I know it I am finished. There is one workout called "the challenge" that is 30 minutes of push ups and pull ups...seriously thats it! That gets a little crazy and I have to get a little (or a lot of) assistance with pull ups.<br />

I can't believe how fast time is going. I am almost complete with my month long healthy eating challenge and I am in the first transition week of P90X3. I am excited to continue with the programs and see what I am capable of accomplishing!<br />

Around the holidays I became obsessed with making hair bows. Even though I don't have daughters, my sister never lets my 10 month old niece leave the house without a hair bow in her hair. For months, she rotated between two barrettes and I was getting sick of seeing the same ones. I decided for Christmas I was going to make my little niece a bunch of hairbows as well as a hairbow holder to go with them. I got so excited about this idea that I thought I would make the same thing for my friend's new baby girl.</div>

I found a piece of unfinished wood at Michael's for only a $1! I painted one pink and one grey. I stenciled the names on the wood similar to what I did for this <a href="http://52social.blogspot.com/2013/11/10-things-to-do-each-day-sign.html" target="_blank">sign</a> and carefully painted the letters. I used my Martha Stewart stencils to decorate, added some hardware so they are able to hang it and glued three long pieces of ribbon on each one. They came out great and my sister loved the gift!</div>
